A couple weeks ago, I entered a fun challenge at work: to make a dish, over the weekend, that used three mystery ingredients. Check out what I came up with! I’ve been seeing whole, fresh vegetables being sold as snacks lately, and I hope it’s a trend that takes off! I’m not talking about snack chips that use a little cauliflower or spinach powder in them, I’m talking about unadulterated vegetables… in snack form!

I’m making the most of the stay-at-home order in my state, and the scale is proof. I’m 9.2 pounds lighter since I began working from home! In Part One, I talked about my food choices. In this post, I’m tackling exercise. And to sum it up, I’m exercising a lot.

I’ve been working from home for five weeks, and, all things considered, I’m in a really good spot. I’m still employed, with no signs of being laid off. I’m healthy, as is my family. I suffer a little cabin fever every once in a while, but long walks with JJ really help with that, and if they don’t, I’ll go for a drive, with no destination, just to get out of the house.

Some friends at work came up with a really fun idea: a cooking challenge, inspired by “Chopped” on the Food Network!
