I do love a cauliflower-crust pizza. They’re very healthy, delicious, and they satisfy that pizza craving. I just got my recipe printed in a cookbook! Hey, I hear there’s a big game coming up next weekend… what a great time to make a healthier version of a popular game day food!
Guess what, everyone. That’s not a cauliflower-crust pizza in my hand. I tricked you! That’s actually… a chicken-crust pizza! (I’ll pause for gasps here.) Read the rest of this entry »

Some friends at work came up with a really fun idea: a cooking challenge, inspired by “Chopped” on the Food Network! They posted three ingredients on our internal social media platform on Friday, and over the weekend, everyone that wanted to participate could make a dish using those ingredients. Then, on Monday, Read the rest of this entry »

You know how popular, older TV shows are getting rebooted left and right nowadays? Will & Grace, Roseanne, Queer Eye… and there’s more to come. So I thought I’d reboot one of the classic features on my blog. A silly – I mean wonderful – little game called “What’s in the Crockpot?” that I used to play frequently with my readers.
The rules are simple. Just guess what’s in the crockpot! Are you ready? Read the rest of this entry »

I got a new kitchen tool – a masher – and this is the healthy, delicious recipe where I used it for the very first time!

Low-Carb Pancake Roll-ups are perfect for brunch. They’re great for other meals, too, and particularly versatile, because they’re a finger food, and everyone loves finger food. And what makes them low-carb? I’m glad you asked. Read the rest of this entry »

Here’s an easy, healthy snack for when you’re craving potato chips but don’t want all the carbs: eggplant chips! All you need are Japanese eggplants, and a few things you probably already have in your cupboard.

If it looks like a grain-based salad, and it tastes like a grain-based salad, it’s gotta be a grain-based salad, right?

I love a fun kitchen gadget. My friends know it, too. So when I was chatting with my friends Kristy and Mike a few weeks ago, Kristy asked if I had a Veggetti. I didn’t – I hadn’t even heard of it – and we moved on to other topics of conversation. Then, three days later, a package arrived. Kristy and Mike sent me a Veggetti!
A veggetti is a simple little spiral slicer that Read the rest of this entry »

I’m a normal dude with a pulse, so of course I love pizza. But being on a super-low-carb food program means that pizza isn’t really an option right now. Unless… I make the crust out of cauliflower!

Yes, folks, it can be done! You can use cauliflower to replace Read the rest of this entry »
