SURPRISE! It’s a Race Recap! Ten days ago, I signed up for a race that happened on Saturday. I never mentioned it here. Partly because I didn’t post at all last week (life got in the way), and partly because I didn’t know what to say… it just kinda sorta scared me shitless. Check out the venue, though: how gorgeous is this?

I love when family comes to visit. This past weekend, my sister Laura and her boyfriend Chuck were here, and it was a jam-packed few days. On Sunday, we hosted a brunch, and invited some cousins and friends (check out what I made here). But that was just the tip of the iceberg!
Laura and Chuck rented a convertible, and I loved tooling around town with the top down.

I had family in town over the weekend, so we had a brunch gathering at my place, and I made the entree: a delicious Spinach and Egg Brunch Casserole. I love egg casseroles, but they can be loaded with cheese and bread. This recipe has less of that stuff, and a whole lot of something that I’ve never had in an egg casserole before: cottage cheese. The great thing about flying to Seattle for a competition is that after I was done racing up the Space Needle’s stairwell… I got to hang out in Seattle! It’s an awesome city, and I love visiting. This was my third visit in a year! This visit was quick – slightly less than two days – but it was fantastic. I spent lots of time with my friend Collin, whom I’ve now known for over 18 years.

The first thing I saw when I walked out of my hotel on Saturday morning was… The Space Needle.

It’s wasn’t exactly kismet or anything. First of all, the Space Needle is hard to miss, and secondly, I chose this hotel partly because it was two blocks away. Even so, seeing it got my heart beating a little faster, and I smiled, because I knew that an hour later, I’d be in the stairwell, racing to the top. Read the rest of this entry »

Football season is in full swing, and game day snacks aren’t always super healthy. But I have a recipe for an amazing dip that you can serve instead of nachos or wings that you can turn to for endless munching, with no guilt whatsoever. There’s no added sugar or fat, it’s vegan and gluten-free, and you can easily customize it to suit your own tastes. Plus, there’s no cooking and it only takes 10 minutes. What could be better?
