I love Deviled Eggs, and I love making them at Easter. Want proof? This is the third Deviled Egg post I’ve published after Easter! I shared my recipe for Smoky Onion Deviled Eggs in 2016, and my Avocado Deviled Eggs in 2019.
This recipe is for a more traditional Deviled Egg, but it’s a healthier version, and they’re very good. My mom is a Deviled Egg connoisseur, and she loved ’em.

My office does a fun “Chopped”-inspired cooking challenge, where they provide a list of three secret ingredients, and we use them to make a dish over the weekend. I’ve done it twice before (read the posts here and here)… but this time, I had to stretch the rules a little bit. But I ended up with a delicious late night snack, since that was the category.

I modify and mess with recipes all the time, so that I can make them healthier, more appealing to me, and to use ingredients I have on hand. I recently made some Shepherd’s Pie, but I may have strayed too far in my quest to make it guilt-free. I don’t know if I can still call this Shepherd’s Pie or not. What do you think?
