This kinda looks like a lasagna, but it’s not.
Actually, it’s very similar to a lasagna, in that it has layers of ingredients. But this is a zucchini bake, and it’s lacking two major components that a lasagna has: noodles, and sauce.

I love a fun kitchen gadget. My friends know it, too. So when I was chatting with my friends Kristy and Mike a few weeks ago, Kristy asked if I had a Veggetti. I didn’t – I hadn’t even heard of it – and we moved on to other topics of conversation. Then, three days later, a package arrived. Kristy and Mike sent me a Veggetti!

There’s nothing better than a crispy, crunchy snack. I crave potato chips (and corn chips) (and Cheetos) frequently, so I like having a way to satisfy that craving that’s actually nutritious. Enter zucchini chips. They are exactly what they sound like… and they start with zucchini.

I’m so excited to share this… I have a new partnership with the LA Salad Company, and I’m the new Guest Blogger on their website! It’s a really cool arrangement: in exchange for free veggies, I’m giving them veggie-based recipes for their website. I’m featured at the bottom of LA Salad Company’s home page (see it here), and have my very own page that has photos, a quickie version of my weight-loss story, and, of course, the recipes.
LA Salad Company sells all sorts of veggies to restaurants and supermarkets all across the United States and Canada. A couple recent recipes – my Baked Green Bean Fries and my Beef and Butternut Stew – were made using their products, and they were delicious. But don’t worry, loyal readers, nothing will end up on my LA Salad Company page that you can’t also find right here!

On Easter, I headed out to my aunt and uncle’s place for lunch with them and my cousins. My aunt Annie had already said that she was making a ham and some sort of potato dish, so I offered to bring a veggie-based side dish, and she took me up on my offer. Here’s what I came up with: Easter Veggie Ribbons with Ginger and Rosemary!
What’s a veggie ribbon? It’s a vegetable sliced into ribbons by your vegetable peeler.
