I Don’t Always Bring My Lunch From Home… Sometimes I Purchase Healthy Meals, Too

Earlier this fall, I published a post with all the lunches I brought from home during the course of a week. I still bring my lunch to work an awful lot, but sometimes I don’t, just due to lack of time or forgetfulness. I thought I’d share some of the lunches I’ve purchased over the few weeks, because even when I have to buy lunch, I try to make good choices.

My office has a great cafeteria, with lots of options, including big salads that are built while you wait. These salads are my go-to choice. You pick your options as you walk down a big salad bar, at at the end, they toss it with the dressing of your choice. (As if anyone needed information on how a salad is made.)

There’s four lettuce options: iceberg, romaine, spinach, and kale. I tend to stick to spinach or kale, since they’re both nutritional powerhouses. Here’s a kale salad with walnuts, apples, carrots, and dried cherries:

Here’s a spinach-based Cobb salad, with egg, ham, bleu cheese, avocado, and tomatoes.

The one thing I don’t like about the salad process is that I can’t control the dressing. They squirt dressing into the bowl, and it’s up to the customer to say ‘when,’ but it’s hard to tell how much is too much, and there’s always a delay between when the salad builder hears ‘when’ and when they actually stop. That spinach salad was dressed a little too heavily for my taste. I bet I could ask for dressing on the side; I just haven’t tried that yet.

I don’t always get salad at my work cafeteria. I’ll sometimes get a wrap, but I forgot to get a picture of one of those.

Last week, they had a ham special, so I ordered that: ham, with sweet potato and Brussels sprouts sides.

Occasionally I’ll go off-campus for lunch. I went with two friends to Potbelly, a sandwich shop I had never been to before. I ordered a cup of chicken enchilada soup, and had a Mediterranean sandwich with chicken (the smallest size they offer).

I thought Potbelly was just fine. I wouldn’t object if I ended up there again, but I’m not sure I’d seek it out on my own.

A couple weeks ago, I used my lunch break to run a couple errands, and I ended up buying lunch at a local supermarket. They had something called “veggie detox salad” in the deli case, so I got a container of that, plus some pickled green beans and a little package of meat, cheese, and nuts for protein.

Veggie detox salad is broccoli-based, but has other diced vegetables and dried fruit, too. It was pretty good – I’d get it again for sure.

And since I’m sharing food pictures, here’s a dinner I put together last week: pan-seared salmon, steamed broccoli, and a mixture of brown rice and riced cauliflower:

Keep it up, David!
